you could try this one...
my mama used to make hot sauce with scotch bonnet peppers from her garden.
you learn very quickly to wash your paws after handling the peppers....

Just opened up the pod bags for a whiff.

Bhut Jolokia:

A wonderful pleasant pungency I'm not entirely familiar with. Me likey! It seems the vendor is saving the remaining whole pods for grinding, only offering a one ounce bag as part of the three bag set. Hope they are hot! I've had "false alarm habanero or less" Ghosts before.

Trinidad Scorpion:

One little whiff and I was repelled by the strong pungency and the heat(?) in just the aroma. These'll be hot. Going to contact them to see if there is a known sub-variety. There are significant differences between them.

Reaper:

Deceiving little demons - a mild sweet aroma. No indications of heat or pungency. I get similar from three other batches I already have. Once cut open, the fun begins.

CaJohn's Serrano Lime:

Too thin and vineragy for me. Other than that a relatively mild juice with a good flavor. Give me fresh Serranos over this, even from the supermarket.

Underwood Sriracha:

Decent heat with pleasant sweetness of red jalapeño and the sugar. Garlic aroma and flavor is superb. A tad more heat (I can fix that) with less sugar would nail it. Would get again. It would be unfair to compare to Shark Brand as I have already modified the Shark with more Thai chilies and fresh garlic.

Hoff's Smoken Ghost:


Ingredients: Red Jalapeño, Habanero, Chipotle, Ghost, Salt, Vinegar, and Garlic

The hottest of the bunch. Nice blend of pods that really work. With so much flavor and more salt than vinegar, the vinegar flavor is is mild. Not teary-eyed hot as claimed but not for the timid. The sweetness of red jalapeño makes a great base. Would highly recommend.

Smoken Ghost has such a great flavor for its level of heat. And not having preservatives is a plus.

Rescued this sauce with said supermarket Serranos. Cut up maybe 8 of them, removed the seeds (no real heat) added to a 2 cup Pyrex measuring cup, dumped all of the CaJohn's into the cup and applied the stick blender.

Also added a bit of my own ground dried smoked Serrano powder, a bit of dried roasted garlic, some dried lime peel granules and my own ground Bhut Jolokia flakes for extra fun. Made it my own sauce, sort of. CaJohn's 5 ounces, now nearly 9.

Heated in microwave to reach 180°F to kill anything on the fresh pods. Put in vinegar sanitized jar.

Much improved! Tastes like a Serrano now, now with just a bit more heat.

Pace Picante Hot is my go to salsa. Tabasco and Cholula for my hot sauces.

Sriracha for Asian food or tortilla chips.

Red Hot for wings, steak, chops, fritos, and pizza.

Tabasco for salsa, chili, and eggs.

Cholula and Tapatio for Mexican.

Once in a while I'll grab something crazy like Dave's Insanity Sauce.
