No bridge or saddles? I have seen another Jeff Beck Oxblood model that had bridge and no pickup covers, but NO BRIDGE?!...

Real '54s didn't have the tune-o-matic since it hadn't been invented yet.

Actually, the TOM first appeared on the 1954 Les Paul Custom. The "regular" models got it later in 1956.

how do you adjust the intonation with no saddles?

As you can see in the picture below, there are two screws on the tailpiece that press against the tailpiece studs. This allows some control over the intonation.

Later on, the design was changed to this the compensated model for improved control over the intonation.

Despite the fact that such tailpieces lack the individual intonation screws for each string, the intonation isn't as off as you'd expect. Not more than the avarage 3 saddle Tele. Paul Reed Smith has wrap arounds on most of their non-trem models.

But if you really can't do without individual intonation, there are a ton of options for non permanent conversions without having to drill or anything:

That's what I was wondering as well....

Look at the saddle beside the P-90, it's cut for an unwound 3rd string, some aren't. Find one that fits your string type and gauge and the fine tuners will get you very close.
