I have a set of GFS mini humbuckers that I'm trying to connect to some 5-pin molex adapters. Can anyone tell me what gets hooked to what?

Edit: I was looking at the wrong GFS diagram. The correct one is below, which makes more sense.

GFS diagram has:
Signal Ground
Signal +
Pickup Shield Ground
bare wire

(corrected) GFS diagram:
Coil Tap
Signal +
Ground
Bare copper

Molex diagram has:
Tap
Tap
Hot
Ground
Shield

Edit: Since my guitar does not have coil tapping, I assume I just leave the coil tap wire unconnected. Is this right?

Generally, yes.
If the new pickup is out of phase with your other pickup(s), then you would need to swap the hot and ground, but the shield will always be tied to ground.

Thanks much. I was looking at the wrong GFS diagram, but corrected it above. If I don't need coil tapping, do I just leave that wire disconnected, or should it be attached to one of the molex "Tap" leads?

It would be, but depending on what that connects to in the existing board, you may not want it.
