Is there a way to tell what year your guitar was made if it's a factory 2nd and the serial number is gone. All mine had was a sticker with what seemed to me like random numbers?

On mine since it was just the last numbers stamped with a used imprint, I put random numbers in to get the correct number of digits. The first digits tell the factory and the year, so at least I got that.

With my Gretsch G5129 I could still see the original numbers as it was just white tape over the old one....course the SN was in the body as it was a full hollow body guitar...

Shouldnt the old number be under the sticker on your as well?

No, there's nothing under the sticker.
