Old wood?

Not sure if this is a good idea or not. I have a decent supply of mahogany from the Dominican Republic…it is currently best described as ‘furniture’. At a minimum it would have been harvested in the late 1960’s, it is extremely dry. Overall width and length wise it could work for a Les Paul. The challenge is that it isn’t thick enough for a body or a neck. Is it a reasonable idea to potentially laminate a couple of pieces together and go from there?

That's what Norlin did with pancake bodies and 3-piece necks. It works very well unless you're a stickler for '50s specs.

Particularly well for the neck, because you can turn flatsawn boards into virtual quartersawn pieces. If you do a 3-piece neck try to lay out the pieces so the growth rings are like this: ////||||\\\\ so the faint medullary rays display on each piece to maximize stability and strength

How thick, how wide?

There's not much one can do with 3/4 stock for guitard, unfortunately ..

If it's flat sawn I'd laminate 3 piece necks, I've done this with old mahogany and liked it.

i would buy a body blank then glue up the 3/4" stuff like a maple top and make a custom all mahogany LP
