Mono / Stereo jack plates

How do they work?

I have a 2x12 cab with a mono / stereo jack plate.

There are two things I want to do.

1. I want to experiment with just using one speaker.
2. I might run two heads into the cab.

The speakers are both 16ohm, so the jack is 8ohm mono, 16ohm stereo.
To be clear, there are only two jacks, on one plate. One is marked as mono, plugging into it uses both speakers, the other is marked as stereo and is for plugging in the second amp AMD I think only to be used when the mono jack is also being used.

So when I plug into the mono jack, both speakers operate.

If I change the output jack on the back of the amp to 16ohm and plug the speaker cable into the mono jack and also plug a spare guitar cable into the stereo jack (with the other end of the guitar cable not plugged into anything), will I be using just one speaker at16ohm? I can't get my head around how the cab 'knows' to use just one speaker. The guitar cable going into the stereo jack obviously has no load going into the cab, hence I don't know how it works.

Option 2, using two heads, both using the 16ohm output, each plugged into a jack on the back of the cab, this is effectively the same as the above, but what if one amp is not turned on? Specifically, what if the amp plugged into the mono jack is not turned on?
