Couldn't move the knurled nut on mine for love nor money. Removed the switch cavity cover, slight turn on the switch, nut came loose immediately. Magic.

That “thumbwheel” you see is actually the knurled nut holding the poker chip on. Follow the advice(s) given above and you’ll get it off.

And whatever you do, do NOT glue the new one down! The nut will hold it fine (glue will likely damage the finish).

Also, when replacing parts like this with metal ones, be sure you are getting replacement parts with the same finish as the rest of the metal parts on your guitar. Some have chrome, but many have nickel. Chrome has a bluish hue to it while nickel more of a yellow. Wouldn’t want to mix & match chrome and nickel (at least I wouldn’t).

The MN spanner tool came in, I applied the microfiber backing, opened the back plate on the LP and held it in place while using the spanner, removed the old poker chip and put the new one on

What's next...me doing my own guitar setup?

Of course you can learn to setup your own guitars! I started working/experimenting on my own guitars in the 60's, and I didn't know sh+t when I started! It just takes time, patience, and the willingness to ask the right people, the right questions! First, I visited all my local guitar shops and made friends with the repairmen. Later, I worked for one of those shops, and eventually I worked with Fender and G&L. Trust me, If I can do it, you can do it! :)
