From your list, my pick hands down are the PG's. I have the custom shop version which are wound a little hotter. I would not describe them as vintage output. They rock a bit harder than most vintage PAF winds.

As A Strat guy for 30 plus years who also digs Les Pauls.... wire it so your lower tone knob works on the bridge only. Most Strat players (imo) go this route.
BTW.... the EJ strats are killers! You did well with that choice!
2008 Chambered faded loaded with Rewind A2 low output pickups. Best sounding LP I have ever owned or played. I have three historics and this one simply has that sound that I wish I could get from them!
