That's how I was. I always hated the look of the HSS Strats - they just always looked a bit cockeyed to me. But one day I tried the EVH Striped and I realized they sound pretty good! Give one a go sometime.

I bought a Les Paul Standard 60s a couple months back but ended up returning it because it didn’t do it for me.
Latest buy that I kept was back in September - Jackson USA Adrian Smith San Dimas. Loving it and plays like a dream.
@GrandJunction on the two “Strats” I have, the volume knob is a bit farther away than on the regular Fender Strat so that helped me.

One thing to note about the 68 RI Customs is that, although they may be a tick above the Standard USA Custom, they have a chunkier neck than the regular Custom. That was a dealbreaker for me but I also like thinner necks.
The Standard 60s seems redundant considering you already have a Standard 50s and a Classic. All you’re getting is a neck profile between both of those and different pickups.
Customs have a whole different feel and tone because of the hotter pickups and ebony fretboard. So I’d go Custom.

That makes perfect sense to me. A Strat is a tool you use to make music. A Les Paul is an experience, dare I say, privilege.
