    Agreed. If I'm cooking, I will make it the way you like it. My satisfaction from cooking is to please.

    I usually order med rare or medium because most places seem to undercook a bit.

    Overcook and they have to toss it, eat the cost, and grill another...so I usually get 1-2 #s lower than I order....

    In a fine dining place (with a real chef), order exactly as you want it.

    My son is a chef and can nail it.... A chain place with very few exceptions don't know rare or med rare from a battleship....

    FYI, there ain't a real chef within a hunnert miles of a trough joint like the Golden after church all you can stuff in your face, purse, and pockets, Corral.... Damndest thing I have ever seen.... Should be a tv show....

    I took my gal out for steak in Austin a couple of months back, a place called Bartlett's up on Anderson Lane across the street from the North Austin GC. A little on the pricey side, but without a doubt the best steak I've ever had in a restaurant. And her salmon was fantastic too.

    I ordered my steak, their house-marinated ribeye, "between rare and medium rare" -- my exact words -- and that's exactly what I got. Not usually a fan of teriyaki-style marinades on steaks, I prefer to simply enjoy the natural flavor (especially in a ribeye), but they did this up right.

    Any Austinites here, check it out. Those guys know what they're doing. I will definitely be going back for special occasions.

    I've been getting some good filets from my local butcher. Claims they have been aged for 31 days. You pay for them, but all you need is some salt and pepper.

    The first time I grilled for my family I got seriously annoyed at requests for well done (typically from the women, go figure). Not because it's foolish (which it is, because 99% of the time it's done out of fear of disease or blood, neither of which exist in a medium-rare steak) but because for family I buy the good stuff and the benefits of good stuff are non-existent when it's overcooked, which means I'm flushing money down the drain. I learned my lesson though. For the people who I know want it well done I cheap out and buy round. If they want shoe leather they can have it, I'm not going to waste a delicious/expensive steak on them.

    If I'm not paying for it I'm not going to be outraged. But I do reserve the right to laugh at them for being wieners, the same right I claim to laugh at people who wear socks and sandals.

    I sop up that "juice" with a chunk of Italian or French bread. Yummy!

    My first job as a teenager was at a steakhouse back in the 80s. I remember taking orders from customers, “extry extry well dun!” And I’m thinking “really?” Even at the age of 16, I knew that was just nasty.

    If you ever get up to Markham Freddy make a point of stopping in at Peter's. They still make Caesar Salad for 2 beside your table from scratch, the food is out of this world. It's just an opulent dining experience.

    Ha! I just have a thing for a fine steakhouse. So even though I'll probably never be in Pawnee I still enjoy clicking the link and checking out the menu.
    I laughed when I read about how old "Click" would hurl abuse at his customers if they ordered fries for dinner!:rofl:

    This was my lunch today. From Chili's Enlightened menu, so just 420 calories. :thumb:

    Probably closer to medium than medium rare, but juice did flow ... first bite to last. :naughty:
