You can find nos 7189s. RCA made one I know. With the 6p14p-ev tubes yes you'll get more clean headroom. Enough that you'll notice a difference.
The 55hz reapers are basically the Celestion G12H30 55hz but with less top end. They're good speakers.
You might be ok. If not you could blow the speakers and possibly blow your amp. I'd rather be safe then sorry.
You will get tone loss simply from plugging the attenuator in before even attenuating. I found that even attenuating slightly sucked all my tone....
