Depends on the intended use. Flash memory is more durable and much quicker to access, however, it's very expensive. If you want the best go with Fusion IO, Woz' new company, but expect to sell your should to the devil just to make the down payment!
In general the faster the HD the better it is. If you need video editing on the fly, instant rendering and stuff like that you'll be better off with the Flash drive, although it's a bit ridiculous because video files are also so large a 120 GB flash drive is not going to be enough.
I've done a lot of AV stuff and never had a single issue using a normal ATA drive, so if it was me, I'd get the 500GB at 7200 RPM.
You need to remember it's a powerbook intended to be portable. You can and probably will have a bigger monitor and a couple external USB drives at home, so you can expand later.
