In that case, I'm changing my vote to the #3 option. As River said, you should plan it out. It doesn't have to be completely scripted, but you should definitely have an outline of where you're going and what you're going to play where. Also, you need to keep your timing right, and not stray too far from the rhythm or the performance will feel flat. Basically, a bunch of small licks built into the rhythm. Performing solo is completely different from jamming with a backing track.
Kudos to you for your endeavor. You know we want to hear how it goes, right?

I stand by Mary Had a Little Lamb, or a blues improv, would be best if you're doing it alone (though Pride and Joy sounds good on acoustic, particularly 12 string). Any of the first 4 would work with backing tracks. I would stick away from Clapton though, I love that song, but you would be best to pick an up tempo number

Err... I was as nervous as hell, but after playing the intro flawlessly I gained composure and played loads of bluesy solos around the main verse riff. Much to my surprise, I didn't mess up at all, and it sounded awesome! I really got the Hendrix sound this time with distortion combined at times with wah and heavy use of the tremolo arm. I couldn't believe myself... It was perfect! Very happy with myself, yet still thinking I need to play better...
