I've heard that repeated a lot, but I don't really think it holds true anymore. Linux can be great even for an average use who just uses the web and email. Some of the more complicated issues like legacy hardware and dual monitors can sometimes be tricky though. Oh and if you're a hardcore gamer, you'll be very sad indeed.
And for a more advanced user like me, it's the perfect solution. Open source software has caught up in MOST areas. I used Photoshop for probably 15 years... I thought GIMP was a POS until I finally sat down and relearned everything. For what I do, it is just as powerful as PS ... and some tasks are actually quicker to do in GIMP. The only area where PS is really ahead is in the advanced print industry related tools.
On the vector graphics side, the Linux apps are just a hair behind Windows, but they are still capable of the same stuff... (just not as many cool tools as in Adobe and Corel products).
Video editing is a ways behind, admittedly. It's been a few months since I've tried, and I've heard that some apps have made progress. I'll have to check that out when I reinstall.

Yeah, the only problem with Apple stuff is the price tag. (well, and their products are designed to be disposable). I just can't afford their desktops or notebooks. Their technology and user experience are both utterly top-notch though. My wife and I love our iPod Touches. (but I also admit I've hacked them both... to get a little more usability out of them
