Nah, everybody who knows their ass from their elbows could work with those knobs.

They're pretty much a "set and forget" fearture. Get the pedal, tweak with the insides for a little bit until you have what you like and use the knobs on the outside for the rest.
The Pork Loin gets my vote in all the pedals mentioned so far, but if I may be so bold to suggest another one: the T-Rex Møller.
The mix knob also contributes to the open character of the Møller, it's like having a pedal in a parallel effects loop. With the mix from 0 to 5, your clean signal is always on and you dial in the amount overdriven sound until it's 50-50%. From 5 to 10, you dial out the amount of clean sound untill it's all overdrive.
Even with the mix on 10, it's still one of the most open and natural sounding pedals around these days.
