However, if you like them, then I don't see any reason not to buy a good one.
BTW, Quilt is a softer Maple; i.e. Western (e.g. Big Leaf) vs Eastern Hard Rock Maple, so IMHO all things being equal it will have an influence on the overall tone of the guitar.
