It's all a matter of taste, and most people just don't have any.
I loved my cherry burst Epiphone when I had it, and the guy I sold it to loved it as well. Now a third party has it, and he also loves it. If I were to buy another Les Paul, I would hope to find a nice cherry burst that played well.
