If you want a decent quality signal, it's worth it to get a DI box of some kind. Behringer and M-Audio make some decent ones for $100 or less. You can plug your guitar directly to the box, then it hooks up to a USB port. The quality of the audio it records is well beyond just plugging into a standard soundcard. Line-6 makes some products specifically for recording guitar as well, with all the built in amp simulation stuff.
But for software, I'd also recommend Audacity.
