The reason some people do that is for intonation purposes and because for some it's easier to turn the screws from the stop side. I for one turn the individual string saddle around. On the low E string and sometimes the G string I will turn the saddle so that the flat side can butt up flat against the bridge to the stop side. Because on some of my guitars it's the only way to get those strings to intonate properly.
